We love soup here and firmly believe that there is never a bad time for soup! Here is our favorite chicken and rice version, which is delicious and was gobbled up this weekend, down to the very last grain of rice:
Cottage Chicken and Wild Rice Soup
1 T. butter
chopped carrot, celery, onion, and bell pepper (I use red)
6-8 cups water with chicken bouillon or chicken broth
1 box Uncle Ben's wild rice mix
4-6 chicken breasts
1 package kielbasa, sliced thickly

Begin by boiling the chicken breasts in the water/bouillon or chicken broth until they're done. Remove and chop, but don't pour out your broth. In a saucepan, saute the vegetables and seasoning packet inside the rice mix together in the butter until the onion is transparent, about 5 minutes. Add the vegetables and the box of rice to the broth and bring to a boil. Turn down to simmer and cover, cooking 20 minutes. Add the chopped chicken and sliced kielbasa and simmer, covered, another 20-25 minutes or until rice is tender.
Test seasonings and add pepper if necessary. The seasoning packet and broth are pretty salty, so you shouldn't need any additional salt. Serve topped with mozzarella, and a green salad and loaf of crusty bread are always nice with soup.

Really? Soup in Texas in the summer? I must be weird, because I don't even like soup in Kentucky in the summer, and I know it gets a heck of a lot hotter in Texas than it does in Kentucky. That being said, this recipe sounds yummy and easy. I'll definitely add it to my recipe file...and pull it out in October! :-)
